Furry burgers

The best hamburger I’ve ever eaten in my life came from pastured Highland cattle right here in the Monadnock region. (Don’t tell my Texas relatives, okay?!) After reading so many horrors about agribusiness and how cattle are raised for our food, I’d basically given up beef, and we decided to raise our own critters. So far, we are only doing chicken and pork, and I was really craving some beef.
So we took a ride over to Pitcher Mountain Farm, which is in Stoddard, not five minutes from our house. Heck, we pass that farm all the time coming home from points east. It’s how my kids knew we were almost home — we pass the furry cows. They sell all sorts of cuts of beef out of freezers in a room right there on the farm, and I found the prices very reasonable.
Seriously, this beef is just delightful! I worried that it would be gamier or something, that I had grown too used to commercially produced beef, but it was lovely. One of the things to remember with grass-fed meat is to not overcook it. I cooked these burgers to medium rare, and it was absolutely perfect. I’m so excited to find beef from humanely-raised right here in our neighborhood.
